Home / People / Arnold Mathews Arnold Mathews Adjunct Faculty Arnold Mathews Jr. is an adjunct instructor in the College of Education. He served as a French and Spanish teacher before becoming an assistant principal and principal. He retired as a North Carolina educator in 2015 but returned to the classroom and taught Spanish for six years in Blairsville, Ga. He earned his Bachelor of Science in Education in French and his Master of School Administration from from Western Carolina University in Cullowhee, N.C. His interests include baking, singing, traveling and spending time with family. He has also self-published two books, “Pizza and a Fruit Tray,” and a children’s book, “Hotcakes for Supper,” which are available through the bookstore at lulu.com.
